Spring Treats

Wondering what you should do with all those Peeps? Why not make some Peep Brownies? Want a quick dessert to bring to dinner? Why not make some apple pie bites?

And since I only like baking at night, here’s a late post with some fun and easy dessert recipes:

 

Peep Brownie’s

I am not a great baker by any means, nor am I very creative in this department, so of course, i got the main part of this recipe elsewhere.

 

So first, you will need:

  1. 1 box of brownie mix (unless you want to make yours completely home-made)
    1. mine box also called for: 2 eggs, vegetable oil, and water
  2. Brownie pan
  3. Peeps
  4. 1/4 cup butter
  5. 2 cups mini marshmallows
  6. 3 cups crushed Shredded Mini Wheats

Step one: Preheat oven according to box (350 degrees F for me) and begin mixing the batter. Once the oven is heated, put the mix in and bake according to box instructions.

IMG_2231Step two: Once your brownies are nice and baked, set them to the side to cool. Now you can cut them into shapes, like circles, if you want. I was pressed for time and wanted to be able to easily transport mine, so I left mine in the tin.

Step three: Crush Mini Shredded Wheats into a bowl. You can use the chow mien noodles the original recipe called for, or just plain shredded wheat instead of the cereal. (I personally got the cereal because I wanted something that I could finish off. I don’t use chow mien noodles often, nor did I need a huge box of plain wheat).

Step four: Heat up butter in microwave safe bowl for about 30 seconds on high. Mix up a little, then add marshmallows. Put them in for 30 second increments until they are nice and melted.

IMG_2232Step five: Here is where you have to move fast. Quickly add and mix crushed shredded wheat, and, with buttered hands, shape them into a circle to make a little nest. Place each nest where you want on the brownie.

Step 6: Garnish with a Peep.

IMG_2235And that’s it! It took me about an hour to get everything together and make. Baking the brownies took me thirty minutes because of the pan I used, but everything else was quick. Very simple and nice for an Easter-y treat.

 

Apple Pie Bites

If baking had levels of easiness, chocolate chip cookies being level 0, this recipe is definitely a level one. It takes about half an hour, including baking time.

So here is what you’ll need:

  1. Pillsbury crescent rolls
  2. Apples (I used green, but it doesn’t quite matter)
  3. Chopped Pecans
  4. Apple Pie Spice (the link has a recipe for that too, if you don’t want to buy it)
  5. Brown sugar
  6. Parchment paper

Step one: Pre-heat oven according to crescent roll instructions (I set 375 degrees F for a regular pan). Place parchment paper on baking sheets.

Step two: Roll out crescent rolls on sheets. Coat each roll with apple pie spice mixed with brown sugar, and then add some chopped pecans.

Step three: Cut an apple into slices. Add a slide to each roll.

Step four: Roll up the crescents, and place in oven the bake for about ten to fifteen minutes depending on your pan and oven.

And there you go! All done. Easy right?
